  頭殼肉分布細小的筋膜,口感非常軟嫩,一頭豬僅這4小塊,超稀少。小吃店熱賣的黑白切小菜,簡單做水煮白切肉,或是煮肉湯都非常美味,搭配米酒薑絲風味更佳。

小火加蓋子慢煮,水煮時間約20-25分鐘,頭殼肉帶有薄筋膜熱熱切會有膠質黏刀不好切,煮好後泡湯裡,等湯涼一點再取出切片。若剛好有煮筍子湯、蘿蔔湯等等,一起下鍋煮,肉味會更香。
